Autumn Squash & Sausage Pasta

 I love getting creative with different pasta recipes using seasonal produce. Acorn squash is my absolute favorite variety of squash so I really try to incorporate it in different and delicious ways. This recipe has quickly become a fall favorite, and the key ingredient is 3 Farm Daughters Pasta. We've all felt that heavy feeling after indulging in a bowl of traditional pasta, but 3 Farm Daughters Pasta is a game-changer—it's high in fiber and easy on the digestive system. It cooks to a perfect al dente texture and holds its shape beautifully, making it a staple in my kitchen!


Ingredients:

  • Place a cast iron skillet over medium heat and add a dollop of olive oil. Allow the oil to warm up for about a minute.

  • Add your chopped sweet onions to the skillet, stirring to coat them evenly in the olive oil. Cook for about 3 minutes until they start to soften.

  • Toss in the diced acorn squash, stirring to mix it with the onions. Let it cook for a few minutes until the squash starts to soften slightly and turn golden.

  • Add minced garlic and a sprinkle of chopped sage to the skillet. These flavors blend. Stir everything together and cook for another 10 minutes on medium low heat.

  • While the vegetables are cooking, bring a large pot of salted water to a boil. Add 3 Farm Daughters Pasta, following the package instructions.

  • Sprinkle a pinch of smoked salt over the vegetables in the skillet to enhance the flavors.

  • Add the diced sausage to the skillet. Cook until the sausage turns a lovely golden brown, about 3 minutes then flip.

  • When the pasta is cooked, reserve 3 ladles of pasta water and pour it into the skillet. Stir in some cheese—nutritional yeast works well for a cheesy flavor without dairy, or use shaved parmesan if you prefer a richer taste. 

  • Once the sauce starts to thicken, add in your pasta. Stir well to ensure the sauce evenly coats the pasta.

  • Season with a crack of fresh black pepper, and serve warm. Enjoy this cozy fall dish with a glass of your favorite vino!
