This pizza is not like your traditional pie, offering a bold combination of flavors that will leave you wanting more with each bite. The earthy Brussels sprouts paired with the rich pistachio pesto and tangy balsamic glaze make for a truly unforgettable dish.

Ingredients:

  • Brussels sprouts

  • Pistachio pesto

  • Red onion

  • Lemon zest

  • Pizza dough

  • Olive oil

  • Balsamic glaze

Instructions:

  1. Preheat your oven to 400°F (200°C) and place a pizza stone inside to heat up.

  2. Sauté the Brussels sprouts in a little olive oil until golden and slightly crispy.

  3. Roll out your pizza dough, or divide it into two for smaller pizzas, depending on your preference.

  4. Once the oven has reached 400°F, carefully remove the hot pizza stone and place your rolled-out dough on top.

  5. Spread an even layer of pistachio pesto over the dough, then drizzle a bit of olive oil for added richness.

  6. Scatter the sautéed Brussels sprouts and chopped red onion across the pizza.

  7. Drizzle a little more olive oil over the toppings, and bake for around 30 minutes, or until the crust is golden and crispy.

  8. After removing the pizza from the oven, finish with a sprinkle of sea salt, lemon zest, and a drizzle of balsamic glaze.
